Such a simple idea and process to enjoy fresh tasting peaches captured at the peak of freshness all year long. These have my Grandma Stella's hand print all over them and this recipe is a favorite piece of my childhood.
Freezer Peaches
8-10 large peaches, peel, slice/chop
1/2 cup orange juice concentrate
1 cup sugar
1 Tb Fruit Fresh
Mix concentrate, sugar and Fruit Fresh in large bowl. Peel (*or blanch see note below) and chop peaches; add to bowl as you go, coating peaches to prevent browning.
Divide among Ziploc freezer bags or whatever size container you wish. Freeze immediately. (Quart size freezer bags stacked flat work well with about 2 1/2-3 cups peaches in each bag plus extra juice. I filled some jars for the bottom of the freezer and a slightly larger amount)
Makes about 4 pints.
When ready to eat, thaw in refrigerator. Consume within a day or so. Make sure peaches are submerged in liquid when refrigerated or they will brown.
My kids love to drink the peachy syrup! Okay, we all like to drink the syrup. Reminds me of Grandma Stella taking out peaches on a Saturday night to serve over ice cream after church while we watched the Golden Girls. (she had like 4 channels; that was the best television option)
Try this mixture in a peach pie, crisp, galette, cobbler or ooooooh, peach margarita or fuzzy navel? Mmmm. Delish.
*to blanch and remove skins quickly and easily: simmer a large pot of water and have ready a large bowl of icy water.
Simmer peaches, depending how big your pot is, I can do about 10, for one full minute. Immediately place peaches in cold water to cool.
Skin easily peels off peaches. Sort of like a blister. If skin isn't slipping off easily your peaches may not be quite ready.
*These are sweet! The sugar can be adjusted, but that's up to you! Enjoy!!
