Calico Baked Beans
Sweet and tangy beans that are a meal in and of itself, however we enjoy this as a side dish to Grandma Stella's Chicken Noodle Hot Dish, on camping trips and really with any of our favorite summer barbecue foods. My favorite side dish to this side dish is my mom's homemade potato salad, which comes as close to Grandma Stella's potato salad as one can get.
Bacon, beef, sausage and a variety of beans swim in a sweet and tangy barbecue sauce in a slow oven for a couple hours.
Calico Baked Beans
recipe by Stella B's Kitchen, in attempt to mimic my mom's recipe...the one in her mind
printer friendly version
1/4 pound ground beef
1/4 pound spicy pork sausage
1/2 cup brown sugar
1/2 Tbsp Dijon mustard
2 tsp Worcestershire sauce
1/2 tsp fresh cracked pepper
1 1/2 - 2 cups ketchup
15 ounce can light red kidney beans, drain and rinse
15 ounce can Great Northern Beans, drain and rinse (white beans)
28 ounce can Bush's Original baked beans, bacon hunks removed
4-6 slices bacon, cooked crisp, crumbled
1/2 white onion, chopped fine
1/2 cup water
Cook both ground beef and pork sausage together with chopped onion, breaking into small pieces while meat cooks. Drain grease off and place cooked meat and onion in a large baking dish. Wipe out pan, cook bacon til crisp. Crumble or chop bacon into small pieces. Add all ingredients to baking dish. Stir. Cook covered in a 300 degree oven for a couple hours until hot and bubbly. Remove cover for last 15 minutes.

My son was just telling me last week that we should learn to make baked beans at home (instead of out of can!). We already use cooked dried beans in almost all of our recipes - except for baked beans. We will definitely be trying this!! Thanks :) rosebakes.com
