Whole Wheat Pizza Crust {using sourdough starter}


Hopefully you're ready to make the Cinnamon Ring recipe I shared because the remaining sourdough starter is used to make this easy crust.  


I chose The Pioneer Woman's pizza crust recipe as another example of how to use a sourdough starter because it always turns out so tender and I love the flavor the olive oil gives it.  Her recipe calls for all purpose flour, but I've used all whole wheat flour in this recipe.  I do both, so whatever sounds good to you, works.  When I use all whole wheat flour and no all purpose flour, I reduce the amount slightly, by a tablespoon or two.  Remember, starter is half water and half flour.  If you use 1 cup starter in a recipe, reduce the flour called for in the recipe by 1/2 cup and reduce the liquid called for in the recipe by 1/2 cup.  Easy peasy.

Whole Wheat Pizza Crust  {using sourdough starter}

Makes two 12-14 inch pizzas


1 cup sourdough starter
1 cup warm water
1 tsp yeast
3 1/4 cups plus 2 Tbsp whole wheat flour  (or use 3 1/2 cups all purpose flour)
1 tsp dry active yeast
1/3 cup olive oil
1 tsp salt


Stir starter well.  Mix all ingredients in a stand mixer fitted with a dough hook.  Mix for two minutes until well blended and a smooth ball forms.  Place in oiled bowl covered with plastic wrap until nearly doubled in size.  Divide dough into two pieces, roll out into desired shape.  Dock dough by poking fork holes all over the top to prevent bubbles from forming during baking.  Top as desired.  Bake on parchment lined *pizza screen in 400 degree oven for 14-18 minutes.



  
*Baking times will vary depending upon your choice of baking pan.  I prefer baking stones or screens because they crisp up pizza bottoms much nicer than sheet pans.  Also, each oven can be a bit different, so use this time as a guide.

  4. I love WW flour pizza crusts. Do you know how this freezes? I like to make a double or triple batch and parbake before freezing to make pizza night quick and easy. I would love it if you would share this on my linky party
