I'm pretty sure soup season is not upon us, but that didn't stop us from making and devouring these buttery bread sticks with one of our favorite soups.
This makes a large batch, 16 bread sticks, and they are best eaten the day made. If you don't have vital wheat gluten, simply add a couple more tablespoons of flour in place of it.
Divide dough into 16 pieces.

Bread Sticks
{Olive Garden Knock-Off}

1 1/2 cups warm water
1 Tbsp dry active yeast
1 Tbsp sugar
1 Tbsp salt
4 1/2 cups flour (up to 5 cups)
2 Tbsp vital wheat gluten
2 Tbsp vegetable oil or melted butter
additional melted butter to brush on baked bread sticks
garlic salt for sprinkling, to taste
Place all ingredients in the bowl of a heavy stand mixer and knead with a dough hook on speed 2 1/2 for about 7 minutes. Spray dough with cooking spray, cover with plastic wrap and allow to rise until nearly double in size. Punch down dough and divide into 16 pieces. Roll each piece into a long rope and space a couple inches apart on two sheet pans. Allow bread sticks to rise for about 30 minutes, or until nearly double in size. Bake at 400 degrees for about 15 minutes until golden brown. Brush warm bread sticks with butter and sprinkle with garlic salt.
*note ~ During the first minute or so of mixing, add more flour if the dough is too sticky, adding a tablespoon at a time. Dough will be soft.

Thanks for sharing at Bacon Time. I have to tell you, I worked at the Olive Garden for about 1 1/2 years while going to college, and the bread sticks they make come from a bag. I know because I prepared and served millions of them back then. They are your typical store bought bread sticks, covered in melted butter and garlic salt. After they are baked, buttered, and seasoned we would keep them in a steamer to stay warm. Yours being baked from fresh dough must be much better then Olive Gardens :)

I think you can just use bread flour instead of all-purpose flour in the recipe.
DeleteWhen I don't have vital wheat gluten, I just skip it. Add a couple Tbsp flour and you'll be good. I like that it adds a nicer texture to the dough, more elastic and light. But you can certainly make good bread without it. Hope that helps:)
