Cake Batter Pudding Cookies
I'm always up for trying new cookie recipes and this one has been at the top of the list to make.The cake batter threw me off a bit, but they looked so darn good, I bookmarked them for later after spotting them this winter. The original cookies look really fun with sprinkles, but I had to substitute mini chocolate chips because I didn't have enough multi-colored sprinkles.
Cake Batter Pudding Cookies are a little different from my other pudding cookie recipe. They are dense and sweet, almost like eating cookie dough, but it's baked. Does that make sense? My cookie-dough-loving husband really liked these. This recipe is going in the keeper box and next time I will add sprinkles and use a funfetti mix as Terri had done. Check out her cookies {HERE}.
Cake Batter Pudding Cookies

recipe makes about 3 dozen cookies
1/4 cup granulated sugar
3/4 cup brown sugar
3/4 cup butter, softened
2 eggs
1 (3.4 ounce) package instant vanilla pudding
3/4 cup dry yellow cake batter mix (or funfetti)
1 tsp vanilla
1/2 tsp salt
1 tsp baking soda
2 1/4 cups flour
1 cup mini chocolate chips OR 1/4-1/2 cup sprinkles
Cream butter and sugars together. Add pudding and cake mixes. Blend in eggs and vanilla. Add dry ingredients and mix until just incorporated. Stir in chocolate chips or sprinkles. Roll dough into tablespoon-size balls. Bake on parchment lined sheet or baking mat at 350 degrees for about 11-12 minutes. Mine were perfect after 12 minutes. Cool. Store in airtight container.
