This scrumptious dessert couldn't be easier with simple semi-homemade ingredients you probably have on hand. Bake up a pan of your favorite brownies, top them with a sweetened cream cheese layer, followed by chocolate pudding, then whipped topping and lastly chopped Andes mints. Yum!
Mint Brownie Delight

1 package brownie mix {bake according to package directions in 9 x 13 pan}
8 ounces softened cream cheese
1 1/2 cups powdered sugar
16 ounces Cool Whip, divided
2 cups 2% milk
3.9 ounce package instant chocolate pudding
1/2 cup chopped Andes mints, more or less to taste
Bake brownies and cool completely. Beat cream cheese with powdered sugar. Once combined, stir in 1 1/2 cups Cool Whip. Spread on brownies. Refrigerate while making pudding. Beat pudding mix with milk. Once thickened and smooth, spread on cream cheese layer. Top with remaining Cool Whip and chopped mints. Refrigerate.
This dessert is perfectly delightful without chopped mints, or you could add your favorite chopped candy {Heath bar would be pretty fantastic} or chopped walnuts! Chocolate curls make a pretty presentation too.
