Special K Bars {A Classic}


A childhood classic and family favorite that I had to add to my recipe index, so forgive me for posting the obvious here.  Our son {with a severe peanut allergy} was at Grandma and Grandpa's for the weekend and the first thing I wanted to do after I got back from dropping the kids off was eat trail mix and peanut butter and then make these!  After digging through a couple old cookbooks and finding a few slightly different recipes, I did what I always do...I called my mom.  She rattled off her recipe from the top of her head and no surprise, she had the right one!  While I mixed the chips during melting my husband eagerly watched over my shoulder and suggested the frosting still have chunks of butterscotch.  I like the chunks!


Special K Bars

1 1/2 cups sugar
1 1/2 cups corn syrup
1 1/2 cups creamy peanut butter
8 cups corn flakes 
12 ounce bag semi sweet chocolate chips
12 ounce bag butterscotch chips


Bring sugar and syrup just to a boil in a heavy saucepan.  Once mixture begins to boil throughout, take the pan off the off heat and stir in peanut butter.  Pour over corn flakes and gently press into a buttered 9x13 inch pan.  Melt chocolate and butterscotch chips and spread over bars.  





Yes, I realize we call them Special K Bars when corn flakes are used.  Tomato tomata, do as you wish.  'Corn Flake Bars just sounds weird!
