Fresh Sweet Corn Casserole


Fresh Sweet Corn Casserole was inspired by The Pioneer Woman's Food Network recipe.  I wanted to avoid that last minute crunch time of getting all the food on the table and boiling the corn last minute when making ribs last week.  Since the oven was on for twice baked potatoes, I lightened up Ree's recipe and this version is a keeper!


Fresh Sweet Corn Casserole

6-8 ears of corn, removed from cob
1 red bell pepper, finely chopped
1/2 jalapeno pepper, seeds and membrane removed, finely chopped
3 Tbsp minced onion
1/4 cup heavy cream
1/4-1/2 cup milk
3 Tbsp butter
Salt and Pepper to taste


Saute bell pepper, jalapeno and onion in butter until tender.  Mix all ingredients in a shallow, buttered baking dish.  Bake at 350 degrees for about 30 minutes, uncovered, until hot and bubbling.  Leftovers reheat nicely.
