Hello out there! It's been nearly a month since I've taken photos and blogged about a recipe. Our family has been busy and with the extreme heat, we're enjoying the grill and light, simple meals. It felt kind of nice ignoring the computer and not feeling guilty about skipping photographing new recipes, but I'm back with some yummy stuff to share.
When the garage sale was done and we finished cleaning up and donating everything left over, one of my girls and I decided to catch up on some DVR episodes of the Pioneer Woman. When she saw this recipe she asked if we could make them. Perfect for hot summer days!
Fruit Cups ~Frozen Snacks

1-2 cups frozen or fresh blueberries
1 1/2-2 cups Grandma Stella Freezer Peaches or frozen peaches
1 large can mandarin oranges, drain well
1/2 cup or about 10 ounces crushed pineapple, drain well
2 cans fruit cocktail, drain well
1 can frozen pineapple-orange juice concentrate, thaw
2 Tbsp fresh lemon juice
4 firm bananas, cut in small chunks
Mix everything above in a large bowl. Divide into 15 - 9 ounce plastic cups and cover with plastic wrap. Freeze. To serve, thaw for about 45 minutes before enjoying. Use whatever fruit you enjoy!
