Pita Pizza


Pita pizzas aren't a new thing to us, we had been using the store bought pitas for these because we like the olive oil toasted crust and a what's not to love about anything miniature?  The first time I made this delightful pita bread recipe, I knew it would make an even better mini pizza.  I'm not sure which is better, the pita bread as a sandwich or toasted as a personal pizza!  I hope you try it!


Brush the pita bread with olive oil on both sides, lightly toast them in a 350 degree oven on a baking sheet until just starting to brown, then flip and toast the other side.  {You will want to just eat the bread now, all toasty and olive oiled up, but hold on...}  Top the pita with sauce, cheese and whatever you like.  Pop them back in the oven until warm and melty.  Enjoy!!  


These are especially fun for kids to top themselves and you don't have to mess around with the dough.
