Hot Cocoa Mix




I can't think of a better way to enjoy gift wrapping, tree trimming, hall decking and holiday card writing more than with a steamy, dreamy cup of hot cocoa!  My kiddos love drinking cocoa and I've been searching for a great tasting homemade mix.  After consulting a couple cookbooks, favorite recipe sites and sampling hot cocoa, I can tell you this concoction is a hit.  We've already finished our first batch and cold weather has yet to arrive in Minnesota.

Combine the dry mix with hot milk for an ultra creamy cup of cocoa, but prepared with hot water is usually how I serve it to the kids.  We're also enjoying a blend of chopped white chocolate and dark chocolate, but use whichever you prefer.  Treat yourself {or the recipient of this cocoa} to premium chocolate for best results.  If your kiddos are into crafty gifts, they can make {these Simple Candy Canes} and attach them to the package for a personal touch.

2 ounces premium white chocolate
2 ounces premium dark chocolate
1 cup nonfat dry creamer
3 cups instant nonfat dry milk
1 1/2 cups Dutch process cocoa
2 1/2 cups powdered sugar

Finely chop chocolates.  In a food processor, pulse chocolates with dry milk until finely ground.  Add remaining ingredients and and pulse to blend everything together.  Store in an airtight container.  To serve, add 1/4 cup of cocoa mix to 1 cup very hot milk or water.  

Serve topped with whipped cream and a dusting of cinnamon.  For an adult beverage, add a splash of peppermint schnapps before topping.  

*note the size of your food processor and make cocoa mix in batches if necessary
